Animal Spotlight!

Woody was an owner surrender. So many of our friends at Sunrise have been victims of owner surrender. We encourage people to think about the responsibility involved prior to getting a pet. Animals form bonds just like we do and it can be extremely hard on them emotionally to recover from being abandoned. Luckily Woody has adjusted to life at Sunrise just fine! He fits in with the other animals perfectly. He spends a lot of time with the goat/sheep herd and playing with his BFF Baby Moo! He always comes running when he knows it's feed time!

Recently Woody suffered a life-threatening injury. He was playing with Baby Rambo and they locked horns. One of Woody's horns was ripped out of his head. He spent a lot of time with the vet and in seclusion after his injury and was able to make a full recovery! We are so thankful he is okay! We did incur some very expensive vet bills related to Woody's care, if you would like to help cover the costs of his expensive vet bills click here to donate. We appreciate it!

Vegan Recipe of the Month!

Provided by our friend The Meaty Vegan (www.meatyvegan.com)

Kale Pesto

Always looking for ways to add more greens to our dinners and trying to include kale is often challenging. This Kale Pesto is delicious and nutritious and great on everything from gluten-free pasta to chicken-free sandwiches.

2 bunches curly kale
1 cup packed fresh basil leaves
2 T. olive oil
3 garlic cloves, rough chopped
1/4 cup pine nuts
Juice of one lemon

Optional vegan Parmesan

Stem, cut, and wash thoroughly curly kale and blanch in 2 cups boiling water for five minutes. Add basil and garlic cloves and simmer for an additional minute. Strain kale/basil/garlic and add to high speed blender. Pulse on medium adding the olive oil, lemon juice, and 1/2 of the pine nuts. Continue blending until smooth (adding water as needed). Pour Kale Pesto over pasta and garnish with remaining pine nuts, vegan Parmesan, and salt and pepper to taste.
